Mediterranean-inspired 5-bean salad with olives, rosemary, and honey Greek dressing.
Ingredients:
  • 1 (15 ounce) can black beans
  • 1 (15 ounce) can kidney beans
  • 1 (15 ounce) can green beans
  • 1 (15 ounce) can wax beans
  • 1 (15 ounce) can garbanzo beans
  • 3 stalks celery, chopped
  • 0.5 medium red onion, chopped
  • 0.5 cup chopped green bell pepper
  • 0.5 cup chopped red bell pepper
  • 0.25 cup sliced green olives
  • 0.25 cup sliced black olives
  • 0.25 cup dried parsley
  • 1 tablespoon chopped fresh rosemary
  • 0.66666668653488 cup Greek salad dressing
  • 1 tablespoon honey, or more to taste
  • salt and ground black pepper to taste
Instructions:
  • Pour the beans into a spacious bowl and combine with celery, onion, bell peppers, olives, parsley, and rosemary.
  • Combine Greek salad dressing with 1 tablespoon of honey, adjusting the sweetness to your liking. Toss the dressing with the salad until well coated, then season with salt and pepper.
  • Chill in the fridge for 2 to 3 hours before enjoying.
