Bean and rocket salad with green-olive dressing

Create a quick and delicious green salad packed with nutrients.
Ingredients:
  • 200g green beans, topped, cut into 3cm lengths
  • 100g baby rocket leaves
  • 100g drained green olives, pitted, finely chopped
  • 60ml (1/4 cup) olive oil
  • 40.00 ml balsamic vinegar
  • 23.40 gm seeded mustard
  • Salt & freshly ground black pepper
Instructions:
  • Make the dressing by combining olives, oil, vinegar, and mustard in a screw-top jar. Shake vigorously until well mixed. Adjust the seasoning with salt and pepper to taste.
  • Boil beans in salted water until vibrant green and al dente, about 5 minutes. Drain and rinse under cold water to stop the cooking process. Drain before using.
  • Combine rocket and beans in a bowl, then drizzle with flavorful green-olive dressing. Toss together and enjoy right away.
