Bean burgers

Golden bean patty topped with mango yogurt in a multi-grain bun - a veggie burger with all the fixings!
Ingredients:
  • 420g can five-bean mix, drained, rinsed
  • 300g can butter beans, drained, rinsed
  • 500.00 ml fresh white breadcrumbs
  • 28.00 gm Balti curry paste
  • 1 egg, lightly beaten
  • 62.50 ml coriander leaves, chopped
  • 1 lemon, juiced
  • 36.40 gm olive oil
  • 250.00 ml thick Greek-style natural yoghurt
  • 20.00 gm mango chutney
  • 6 iceberg lettuce leaves, finely shredded
  • 4 multi-grain bread rolls, split, toasted
Instructions:
  • Combine beans in a food processor until roughly chopped. Transfer to a large bowl and mix with breadcrumbs, curry paste, egg, coriander, lemon juice, salt, and pepper until well blended.
  • Shape mixture into 4 patties, coat them in the remaining breadcrumbs, place on a plate, cover with plastic wrap, and refrigerate for 30 minutes.
  • Preheat the oven to 160°C. In a non-stick frying pan over medium heat, cook 2 patties at a time for 3 to 4 minutes on each side until golden and fully cooked. Keep cooked patties warm in the oven while you cook the remaining 2 patties.
  • Mix together creamy yoghurt and tangy chutney in a small bowl.
  • Distribute lettuce evenly on roll bases. Add tomatoes, patties, and a spoonful of mango yogurt. Place roll tops on top. Serve and enjoy.
