Cozy vegetarian comfort food for winter.
Ingredients:
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 1 red capsicum, chopped
  • 2.50 gm Cajun seasoning
  • 1 small fresh red chilli, chopped
  • 400g can Brand 4 Bean Mix
  • 420g can Mexican chilli beans
  • 400g can Brand Italian Diced Tomatoes
  • 40.00 ml flat-leaf parsley, chopped
  • 450g packet microwave white rice
  • 62.50 ml natural yoghurt
Instructions:
  • In a large saucepan over medium heat, sauté the onion in hot oil for 4-5 mins until softened.
  • Start by adding the garlic to the pan and cooking it for 30 seconds. Then, add the capsicum, Cajun seasoning, chili, 4 bean mix, Mexican chili beans, and tomatoes. Cook for 8-10 minutes or until the mixture thickens. Lastly, stir in the parsley.
  • Prepare the rice according to the instructions on the packet.
  • Plate the chili alongside the rice and yogurt for a delicious and satisfying meal.
