Beef and bean chilli with soyaroni

Spicy beef and pasta, a hearty family favorite.
Ingredients:
  • 36.40 gm olive oil
  • 1 red onion, diced
  • 2 cloves garlic, crushed
  • 2 large red chilli, seeded and finely chopped
  • 7.50 gm ground cumin
  • 2 tsp ground coriander
  • 700g regular beef mince
  • 2 stalks celery, diced
  • 420g can kidney beans, rinsed
  • 250.00 gm water
  • 44.40 gm tomato paste
  • 125.00 ml fresh coriander leaves
  • 375g pkt soyaroni
Instructions:
  • In a large saucepan over medium heat, heat the oil until shimmering. Add the onion and garlic and cook for 5 minutes until softened. Stir in the chili, cumin, and coriander and cook for an additional minute.
  • Cook the beef mince until it turns sea red, then add the celery, kidney beans, water, and tomato paste. Bring to a boil, then simmer uncovered for 15 mins. Season with salt & pepper, and finish by stirring in the coriander before removing from the heat.
  • First, bring a large saucepan of water to a boil. Next, cook the soyaroni according to the packet directions. Then, drain the pasta and serve it with the chili. Enjoy!
