Satisfy your Mexican cravings with delicious beef and bean calzones.
Ingredients:
  • 340g (2 1/4 cups) plain flour
  • 1 tsp (1 sachet) dried yeast
  • 2.25 gm sugar
  • 250ml (1 cup) warm water
  • 27.30 gm olive oil
  • 1 long fresh red chilli, thinly sliced (optional)
  • 450g lean beef mince
  • 2-3 garlic cloves, crushed
  • 400g can kidney beans, rinsed, drained
  • 30g pkt taco seasoning
  • 100g colby cheese, diced
  • 1 avocado, mashed
  • Mixed salad leaves, to serve
  • Lime cheeks, to serve
  • Sour cream or yoghurt, to serve (optional)
Instructions:
  • In a bowl, combine flour with a pinch of salt. Create a well and add yeast and sugar. Add warm water, 1 tablespoon of oil, and chilli if desired. Stir with a flat-bladed knife until dough forms. Transfer dough onto a lightly floured surface and knead for 3-4 minutes until smooth.
  • Grease a large bowl with a light spray of oil. Transfer the dough into the bowl, cover, and let it rise in a warm spot for 30-40 minutes, or until it doubles in size.
  • In a large frying pan over medium heat, heat the remaining 2 tsp oil. Cook the mince, stirring occasionally, for 4-5 minutes. Add garlic and tomatoes, cook for 2 minutes. Stir in beans and taco seasoning, then cover and simmer for 15 minutes. Uncover and simmer for an additional 5-10 minutes until the liquid reduces. Remove from heat and let cool.
  • Preheat your oven to 210C/190C fan forced and line 2 baking trays with baking paper. Punch down the dough, then gently knead it on a floured surface until smooth. Divide the dough into 6 portions and shape each into an 18-20cm disc.
  • Mix the cheese into the mince mixture. Spoon one-sixth of the mixture onto one side of each disc. Moisten the edges with water. Fold the discs in half to make half moons. Seal the edges well. Arrange on the baking tray. Spray with oil. Bake for 25-30 minutes until golden. Enjoy with avocado, salad, lime wedges, and optional sour cream.
