Mexican Beef and Bean Casserole

Spice up taco night with a zesty, cheesy beef and bean casserole.
Ingredients:
  • 1 pound ground beef
  • 2 cans (15 to 16 ounces each) pinto beans
  • 1 can (8 ounces) tomato sauce
  • 1/2 cup thick & chunky mild salsa
  • 1 teaspoon chili powder
  • 1 cup shredded Monterey Jack cheese (4 ounces)
Instructions:
  • Preheat the oven to 375°F.
  • Brown the beef in a skillet over medium heat for 8 to 10 minutes, stirring occasionally; then drain.
  • To start, give the beans a quick rinse and drain in a strainer. Next, combine the beef, beans, tomato sauce, salsa, and chili powder in the ungreased baking pan.
  • Bake uncovered for 40-45 minutes, stirring occasionally until hot and bubbly. Remove lid, sprinkle cheese on top, and bake for an additional 5 minutes until cheese is melted.
