Savory beef and bean casserole with tortillas, enchilada sauce, and gooey cheese. Top with sour cream and enjoy!
Ingredients:
  • 1 (1.5 ounce) package dry enchilada sauce mix
  • 1 (6 ounce) can tomato paste
  • 0.75 cup water
  • 1.5 pounds ground beef
  • 1 teaspoon garlic salt
  • 0.5 teaspoon onion powder
  • 1 (16 ounce) can refried beans
  • 1 (12 ounce) package corn tortillas
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • Combine the dry enchilada sauce mix in a medium bowl following the instructions on the package, substituting tomato paste and water for tomato sauce.
  • Brown the ground beef in a large skillet seasoned with garlic salt and onion powder, then drain the fat. Combine the beef with refried beans and 1/2 cup of enchilada sauce.
  • Layer half of the corn tortillas in a 3-quart casserole dish after dipping them in the remaining enchilada sauce. Arrange tortillas in the dish. Spread half of the meat mixture over the tortillas, followed by half of the Cheddar and Monterey Jack cheeses. Repeat layers with remaining ingredients: tortillas dipped in sauce, meat mixture, tortillas, and cheese. Finish by pouring any leftover sauce over the layers and topping with the remaining cheese.
  • Bake in a hot oven for 20 minutes, then allow to rest for 5 minutes before serving.
