Cheesy beef and tomato casserole with layers of tortillas - a hit with kids!
Ingredients:
  • 1.5 pounds lean ground beef
  • 1 (15 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 1 teaspoon ground cumin
  • 2 teaspoons chili powder
  • 4 (10 inch) flour tortillas
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) while you lightly grease a deep dish pie plate and set it aside.
  • Brown ground beef and onion in a large skillet over medium heat until beef is no longer pink; drain fat. Push meat and onion to the sides of the pan. Add garlic to the center, cook briefly, then stir everything together.
  • Combine tomato sauce, tomato paste, cumin, chili powder, and salt to taste, stirring until well blended. Let the mixture thicken slightly.
  • Spread a thin layer of the beef mixture on the bottom of the pie plate. Layer tortillas, beef mixture, and cheese, ending with a final layer of cheese on top.
  • Place in the oven until gooey cheese becomes perfectly golden, about 30 minutes.
