Enchilada Bubble Bake

15-min prep: Beef and bean casserole with Pillsbury biscuit bubbles in mild sauce. Bake and enjoy!
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 2 cans (7.5 oz each) Pillsbury™ refrigerated biscuits
  • 1 can (15 oz) Progresso™ black beans, drained
  • 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 1 can (8 oz) tomato sauce
  • 1 cup shredded Mexican cheese blend (4 oz)
Instructions:
  • Preheat oven to 350°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In a 10-inch skillet, sear the beef over medium-high heat for 5 to 7 minutes, stirring occasionally, until it loses its pink color. Drain excess fat, if needed.
  • Divide each can of dough into 10 biscuits. Use a pizza cutter to slice each biscuit into quarters.
  • Combine beef, beans, enchilada sauce, and tomato sauce in a large bowl. Mix in biscuit pieces. Transfer mixture to a baking dish and top with cheese before baking.
  • Bake for 25-30 minutes, then allow to rest for 5 minutes before enjoying.
