Elevate green beans with a crispy breadcrumb topping for a delicious twist on a classic side dish.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 4 anchovy fillets, finely chopped
  • 2 garlic cloves, crushed
  • 70g breadcrumbs
  • 500g green beans, ends trimmed
  • 62.50 ml chopped flat-leaf parsley
Instructions:
  • In a large frying pan over medium-high heat, heat the oil until shimmering. Add the anchovy and garlic, stirring frequently, for 1 minute until fragrant. Then add the breadcrumbs and cook, stirring occasionally, for about 5 minutes until they turn a lovely golden brown. Remove from the heat and enjoy!
  • Cook the beans in a pot of boiling salted water until they are vibrant green and tender yet still crisp, about 2-3 minutes. Drain thoroughly.
  • Transfer the beans to a serving platter, generously sprinkle with breadcrumb mixture and freshly chopped parsley, and serve promptly.
