Beans with anchovy garlic breadcrumbs

Green beans coated in crispy breadcrumbs for a deliciously crunchy side dish!
Ingredients:
  • 80ml (1/3 cup) extra virgin olive oil
  • 40g (about 14) drained anchovy fillets, roughly chopped
  • 3 garlic cloves, cut into thin strips
  • 600g green beans, topped
  • 75g (1 1/2 cups) fine breadcrumbs from day-old, Italian-style bread
  • Ground black pepper, to taste
Instructions:
  • In a large heavy-based frying pan over medium heat, heat the oil until shimmering. Add the anchovies and garlic, and cook for 4-5 minutes, stirring often, until the anchovies break down and the garlic turns golden brown.
  • Steam the beans in a steaming basket over simmering water until they turn bright green and are tender crisp, for about 4-5 minutes. Alternatively, boil the beans in water.
  • Transfer the beans to a heatproof bowl and drizzle with 1 tablespoon of the oil mixture. Mix thoroughly to coat the beans evenly. Cover to preserve warmth and set aside.
  • Warm up the oil mixture in the pan over medium-high heat. Toss in the breadcrumbs and cook, stirring, for 4-5 minutes until they turn crispy and golden brown. Season with a sprinkle of pepper.
  • Transfer the beans onto a decorative platter and generously sprinkle half of the breadcrumb mixture on top. Serve the remaining breadcrumb mixture in a small bowl for guests to enjoy alongside the beans.
