Butter beans with anchovy breadcrumbs

Elevate side dishes with vibrant butter beans - sweeter than green beans, adding a pop of color and delicate flavor.
Ingredients:
  • 60ml (1/4 cup) olive oil
  • 70g (1 cup) fresh breadcrumbs (made from day-old bread)
  • 1 garlic clove, finely chopped
  • 6 drained anchovy fillets, finely chopped
  • 62.50 ml chopped fresh continental parsley
  • 500g butter beans, trimmed
Instructions:
  • In a frying pan over medium heat, warm oil. Sauté breadcrumbs, stirring occasionally, until they turn light golden, about 2-3 minutes. Add garlic and anchovy, and continue to cook, stirring, until fragrant and breadcrumbs are golden, about 1-2 minutes. Mix in parsley and season with salt and pepper to taste.
  • Boil beans in salty water for 2-3 minutes until tender-crisp. Refresh in cold water, then place on a platter and top with breadcrumbs.
