Spiced oven-baked beans with pancetta

Nutritious, high-fiber baked beans - a comforting side for winter nights.
Ingredients:
  • 18.20 gm olive oil
  • 1 medium brown onion, chopped
  • 100g sliced pancetta, cut into 2cm pieces
  • 2 garlic cloves, thinly sliced
  • 1.25 gm ground cinnamon
  • 1.25 gm ground nutmeg
  • Pinch ground cloves
  • 44.40 gm tomato paste
  • 5 parsley stalks
  • 400g can butter beans, drained, rinsed
  • 400g can borlotti beans, drained, rinsed
  • 62.50 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • Preheat oven to 190 ?C (170 ?C fan-forced).
  • In a hot frying pan, sauté onion and pancetta until onion softens, about 5 minutes. Stir in garlic, cinnamon, nutmeg, and cloves; cook until fragrant, about 1 minute. Add tomato paste and parsley stalks, cook for 30 seconds. Stir in beans and 1 cup of cold water. Season with salt and pepper.
  • Pour the mixture into a 4-cup baking dish and bake for 20 minutes, stirring occasionally, until the beans are warm and the sauce thickens slightly. Remove the parsley stalks, stir in chopped parsley, and serve.
