Green beans with bacon, mushrooms, and herbs - a savory Thanksgiving side dish.
Ingredients:
  • 2 lb fresh green beans, trimmed
  • 8 slices bacon
  • 3 cups sliced fresh shiitake mushrooms (about 7 oz)
  • 1/4 cup chopped shallots
  • 1/8 to 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon freshly ground pepper
  • 1/4 teaspoon salt
Instructions:
  • Heat 8 cups of water in a large saucepan until boiling. Add green beans, cover, and cook for 2 minutes. Then, remove the beans from the hot water and quickly place them in ice water to cool them down. Drain and set aside.
  • In a large nonstick skillet, crisp up the bacon until golden and crispy, then transfer to paper towels to drain. Crumble the bacon and set aside, keeping 1 to 2 tablespoons of the drippings in the skillet.
  • In the same pan with drippings, sauté mushrooms and shallots over medium-high heat for 5 minutes until shallots are tender. Add green beans and pepper flakes; cook for 1 to 2 minutes until heated through. Finish off by mixing in crumbled bacon, pepper, and salt.
