Classic bearnaise sauce, a nostalgic twist ready in under 30 minutes, perfect for steak or asparagus.
Ingredients:
  • 0.25 cup dry white wine
  • 0.25 cup rice vinegar
  • 2 tablespoons chopped shallot
  • 1 teaspoon chopped fresh tarragon
  • 1 teaspoon ground black pepper
  • 6 large egg yolks
  • 4 teaspoons hot water
  • 1 dash hot sauce
  • 1 cup melted butter
Instructions:
  • In a saucepan, combine white wine, vinegar, shallot, tarragon, and black pepper. Bring to a boil, then simmer until reduced to about 1/4 cup, 5 to 10 minutes. Enjoy the aromatic flavors intensifying as you simmer.
  • In a bowl, vigorously whisk together egg yolks, hot water, salt, and hot sauce until fully combined, around 2 minutes.
  • Gently combine the white wine mixture with the egg yolk mixture over a double boiler. Slowly whisk in the butter until the sauce becomes smooth and thick, for about 5 minutes.
