Classic Southern beaten biscuits with lard, low-gluten flour, and cream, made effortlessly in a food processor.
Ingredients:
  • 2 cups all-purpose flour
  • 1.5 tablespoons white sugar
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.25 cup lard, chilled and cut into small pieces
  • 0.33329999446869 cup light cream
  • 2 tablespoons cold water
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C) and prepare baking sheets by greasing them.
  • Combine flour, sugar, baking powder, and salt in a large bowl. Add lard and blend with a fork until mixture resembles coarse meal. Gradually incorporate cream using a standing mixer or wooden spoon. Mix thoroughly until dough forms a ball, adding cold water as necessary.
  • Transfer dough to a clean surface and gently knead. Use a mallet or a rolling pin to beat the dough into a rough rectangle shape. Fold the dough over and beat it out again. Repeat until dough turns white and blisters form on the surface, approximately 15 minutes.
  • Roll out the dough to a quarter-inch thickness, then cut it into two-inch rounds. Lightly prick the tops with a fork and arrange the dough rounds on the baking sheets.
  • Bake in the preheated oven until the biscuits turn golden brown, this should take around 15 minutes.
