Delightful fruit tart with homemade crust and creamy filling, a perfect dessert.
Ingredients:
  • 3 tablespoons water
  • 0.5 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 0.25 teaspoon salt
  • 0.5 cup softened butter, cut into chunks
  • 1 cup heavy cream
  • 0.5 cup white sugar
  • 1 (3 ounce) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 (11 ounce) can mandarin oranges, drained and patted dry
  • 5 large fresh strawberries, hulled and sliced
  • 1 ripe kiwi, peeled and thinly sliced
  • 0.33333334326744 cup fresh blueberries
  • 0.33333334326744 cup fresh raspberries
Instructions:
  • Combine water and vanilla extract in a small bowl.
  • In a medium bowl, combine 1 cup plus 2 tablespoons of flour, sugar, and salt. Add butter and mix until fine crumbs form. Be careful not to overmix to ensure a tender pastry. Stir in vanilla water just until dough comes together. Chill for 15 minutes before using.
  • Roll the dough into a 12-inch circle and delicately transfer it to an 11-inch tart pan. Press the dough into place, trimming off any excess, and ensure the pastry lines up with the edges of the pan. Freeze the pastry shell until firm, for a minimum of 30 minutes.
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Place the pastry shell in the preheated oven until lightly browned, for about 10 minutes. Use the tip of a knife to prick any large bubbles that form. Let it cool to room temperature.
  • Prepare the filling by whipping cream in a chilled glass or metal bowl with an electric mixer until soft peaks form. In another bowl, cream together sugar, cream cheese, and vanilla extract until smooth. Gently fold in the whipped cream.
  • Spread the filling evenly in the cooled tart shell, making sure to reach the edges. Top with mandarin oranges, strawberries, kiwi slices, and berries, covering the filling completely. Enjoy right away or refrigerate for later.
