Perfect classic slice: beautiful, simple, heavenly.
Ingredients:
  • Melted butter, to grease
  • 190g (1 1/4 cups) plain flour
  • 24.00 gm icing sugar mixture
  • 125g chilled butter, chopped
  • 40.00 gm water
  • 5 nectarines, halved, stone removed, cut into thin wedges
  • Icing sugar, to dust
  • 200g butter, at room temperature
  • 155g (3/4 cup) caster sugar
  • 4.40 gm vanilla essence
  • 100g (1 cup) almond meal
  • 150g (1 cup) plain flour
Instructions:
  • Preheat the oven to 180°C while generously greasing a 20 x 30cm lamington pan with melted butter. Line the base and two long sides with non-stick baking paper, leaving extra paper to hang over the edges.
  • Combine flour, icing sugar, and butter in a food processor until mixture resembles fine breadcrumbs. Add water and process until just combined. Press mixture evenly into pan and refrigerate for 20 minutes. Bake until light golden (about 15 minutes) and cool for 30 minutes before serving.
  • In a large bowl, use an electric beater to whip together butter, caster sugar, and vanilla until light and creamy. Gradually add eggs one at a time, beating well after each addition. Gently fold in almond meal and flour until combined.
  • Spread the filling over the pastry base in the pan. Place the nectarine slices in rows on top and press them gently into the filling. Bake in the oven for 30 minutes or until golden. Let it cool for 5 minutes, then cut into 8 pieces. Sprinkle with icing sugar, add a scoop of vanilla ice cream, and serve right away.
