Cranberry sauce

Homemade cranberry sauce is versatile and can be used with roasted meats, gravies, stews, or desserts like Frangipane tart from Oliver's Christmas Cookbook. Don't let leftovers go to waste!
Ingredients:
  • 4 eating apples
  • 50 g unsalted butter
  • 2 tablespoons maple syrup
  • 4 sprigs of fresh thyme
  • 300 g fresh or frozen cranberries
  • 50 ml quality spiced rum
Instructions:
  • Peel, core, and roughly chop the apples. In a large pan over medium heat, melt the butter until golden and bubbling. Stir in the maple syrup until lightly caramelized, then add thyme leaves, apples, cranberries, and spiced rum. Cook covered for about 15 minutes until apples are soft and sauce thickens. Stir occasionally, adjusting consistency with water if needed. Taste and adjust sweetness with more maple syrup if desired. Transfer to a bowl, cool to room temperature, cover, and refrigerate until ready to serve.
