Beef, miso & sesame noodles

Whip up a quick and delicious beef noodle stir fry for dinner.
Ingredients:
  • 80ml (1/3 cup) salt-reduced soy sauce
  • 48.00 gm miso paste
  • 15.00 gm sushi seasoning
  • 20.00 ml finely grated fresh ginger
  • 270g udon noodles
  • 13.80 gm vegetable oil
  • 500g beef rump steak, thinly sliced
  • 1 white onion, halved, thinly sliced
  • 1 garlic clove, crushed
  • 1 carrot, peeled, cut into matchsticks
  • 80g (3 cups) shredded cabbage
  • 40.00 gm water
  • Thinly sliced shallot, to serve
  • 6.00 gm sesame seeds, toasted, to serve
Instructions:
  • In a bowl, mix together soy sauce, miso paste, sushi seasoning, and ginger. Let it sit for later use.
  • Boil noodles in a saucepan of hot water for 8 minutes or until tender. Rinse with cold water, drain, and set aside.
  • In a hot wok or large non-stick pan, sizzle 1 teaspoon of oil. Cook half the beef until browned, about 2-3 minutes. Transfer to a bowl, then repeat with the remaining beef, ensuring the wok is heated between batches.
  • 1. Heat the remaining oil in a wok over high heat until sizzling. Stir-fry the onion for 1-2 minutes until softened. 2. Add garlic, carrot, cabbage, and water, and stir-fry for 2-3 minutes until the carrot is tender-crisp. 3. Toss in the noodles, beef, and soy sauce mixture, and stir-fry for another 2 minutes until everything is heated through. 4. Serve the delicious stir-fry in bowls, and garnish with shallots and sesame seeds.
