Try using flavorful sausage mince for a delicious and convenient twist on classic meatballs.
Ingredients:
  • 8 thick beef sausages
  • 9.20 gm olive oil
  • 1 large brown onion, chopped
  • 2 garlic cloves, thinly sliced
  • 2 small red chillies, thinly sliced
  • 500g cherry tomatoes, halved
  • 44.40 gm tomato paste
  • 80g baby spinach
  • 125.00 ml fresh basil leaves, torn
  • Cooked linguine, to serve
  • Shaved parmesan cheese, to serve
Instructions:
  • Remove the sausage mince from casings, breaking it into small pieces directly into a bowl. Discard the casings. Heat oil in a large frying pan over medium-high heat. Add the mince pieces and cook, stirring occasionally, for 5 to 6 minutes until browned. Remove the pan from heat and carefully drain any excess oil.
  • Put the pan back on the heat. Add in the onion, garlic, and chilli. Sauté for 3 minutes until the onion softens. Introduce the tomato and tomato paste. Simmer for 10 minutes until the tomato breaks down and the sauce thickens. Take the pan off the heat.
  • Fold in the vibrant spinach and aromatic basil leaves. Plate alongside a bed of al dente pasta and a generous sprinkle of savory parmesan cheese.
