Beef and Cheese Enchiladas

Whip up a quick and delicious beef and cheese enchilada for a fun Mexican feast in just 30 minutes!
Ingredients:
  • 1 pound lean ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium onion, chopped (1/2 cup)
  • 1 container (16 ounces) reduced-fat sour cream (2 cups)
  • 1 can (15 ounces) yellow and white corn, drained
  • 2 cups shredded Mexican 4-cheese blend (8 ounces)
  • 8 flour tortillas (8 inches in diameter)
  • 1 can (10 ounces) hot enchilada sauce
  • 1 can (10 ounces) mild enchilada sauce
Instructions:
  • Preheat oven to 350°F. Season beef with salt and pepper. Sauté beef and onion in a skillet over medium heat for 8 to 10 minutes until beef is browned; remember to stir occasionally. Drain any excess fat, then mix in sour cream and corn.
  • Spread a layer of 1 cup of cheese on the bottom of an ungreased 13x9x2 inch rectangular baking dish. Place about 1/2 cup of beef mixture on each tortilla and top with a few drops of hot enchilada sauce. Roll up the tortillas with the filling inside and place them seam side down on top of the cheese in the baking dish. Pour the remaining hot and mild sauces over the enchiladas and sprinkle with the remaining 1 cup of cheese.
  • Bake without covering for around 15 minutes, or until the cheese is melted and bubbly.
