Beef and chorizo fajitas with mashed avocado

Experience the delightful burst of flavors in these mouthwatering fajitas.
Ingredients:
  • 500g Beef Rump Steak, thinly sliced
  • 2 chorizo, halved lengthways, thinly sliced
  • 1 red capsicum, seeded, thinly sliced
  • 1 yellow capsicum, seeded, thinly sliced
  • 2 tsp dried oregano
  • 1 large ripe avocado, stone removed, peeled
  • 21.00 gm lime juice
  • 12 mini tortillas
  • Coriander leaves, extra, to serve
  • Sour cream, to serve
  • Lime wedges, to serve
Instructions:
  • In a large frying pan over high heat, heat half of the oil. Add half of the beef and stir-fry for 2 minutes, or until browned. Transfer to a plate. Repeat with the remaining beef.
  • Place the chorizo in the pan and cook while stirring for about 2 minutes until it turns golden brown. Then, transfer it to a plate.
  • Heat the rest of the oil in the pan. Stir in the mixed capsicum and cook for 3 minutes until they soften slightly. Add the smoked paprika and oregano, cook for 1 more minute until aromatic. Mix in the beef and chorizo back into the pan, combine well.
  • In a bowl, combine the avocado and lime juice and mash until creamy. Mix in the chopped coriander. Warm the tortillas according to the package instructions.
  • Present the beef mixture alongside warm tortillas, a flavorful avocado mixture, fresh coriander, creamy sour cream, and zesty lime wedges.
