Creamy feta cheese elevates summer salads and gatherings with its irresistible flavor.
Ingredients:
  • 1 chorizo, finely chopped
  • 1 large green capsicum, thinly sliced
  • 1 red onion, thinly sliced
  • 400g thinly sliced beef rump steak
  • 300g packet taco dinner kit
  • 4 large radishes, cut into thin matchsticks
  • 1 Lebanese cucumber, finely chopped
  • 1 small carrot, grated
  • 100g smooth feta, crumbled
Instructions:
  • In a large, deep non-stick frying pan over medium-low heat, cook chorizo, capsicum, and onion for 5 minutes until chorizo starts to turn golden. Increase heat to high, add beef, and cook for 2 minutes until browned. Stir in taco seasoning (from kit) and ½ cup cold water. Cook for an additional 3 to 5 minutes, stirring occasionally, until the sauce reduces and beef is just tender.
  • Heat the taco shells according to the packet instructions while combining radish, cucumber, and carrot in a medium bowl. Season with salt and pepper.
  • Stuff taco shells generously with savory beef mixture. Finish with a vibrant radish blend, zesty taco sauce (included in the kit), and a sprinkle of creamy feta cheese.
