Spice up your chili with savory chorizo for a versatile and delicious meal.
Ingredients:
  • 1 tablespoon olive oil
  • 3 stalks celery, chopped
  • 3 cloves garlic, chopped
  • 1 pound ground beef
  • 0.5 pound spicy chorizo, casings removed and discarded
  • 2 (28 ounce) cans tomato sauce
  • 1 (14.5 ounce) can stewed tomatoes
  • 1 (6 ounce) can tomato paste
  • 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  • 1 (1.25 ounce) package chili seasoning mix, or to taste
Instructions:
  • In a large pot, warm olive oil over medium-high heat. Cook celery, onion, and garlic in the oil until tender, about 5 to 7 minutes.
  • Cook and stir the ground beef and chorizo with the vegetable mixture, gradually breaking the meat into smaller pieces until fully browned, about 7 to 10 minutes.
  • Combine all the tomatoes and tomato paste with the beef, then add the chili seasoning mix. Bring to a boil, then simmer on low heat until thickened, approximately 1 hour and 45 minutes.
