Air-fried flautas stuffed with ground beef chuck, chorizo, and Anaheim chiles - a delicious game day treat!
Ingredients:
  • 7 Anaheim chile peppers
  • 2 pounds ground chuck
  • 0.33333334326744 pound bulk chorizo sausage
  • 0.25 cup canola oil, or as needed
  • 2.5 (12 fluid ounce) cans or bottles light beer
  • 0.75 cup salsa
  • 2 tablespoons ground ancho chile powder
  • 2 tablespoons garlic powder
  • 1 tablespoon ground cumin
  • 1 tablespoon onion powder
  • 1 tablespoon sea salt
  • 1 teaspoon dried marjoram
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon cayenne pepper
  • 24 (8 inch) flour tortillas
  • 2 cups shredded Colby-Jack cheese
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and arrange peppers, cut-side down, on the sheet.
  • Roast peppers in a hot oven until the skins are brown and crispy, around 15 minutes. Transfer blackened peppers to a bowl and seal tightly with plastic wrap to steam as they cool, approximately 20 minutes. Peel off and discard skins, then dice the flesh and set aside.
  • Mix the ground chuck and chorizo in a bowl, ensuring they are evenly combined.
  • Heat a tablespoon of oil in a pot over medium heat. Cook the meat until browned and crumbly, about 10 minutes, then strain out 90% of the grease.
  • Combine beer, salsa, chile powder, garlic powder, cumin, onion powder, salt, marjoram, black pepper, and cayenne with the meat. Mix in half of the diced chile peppers. Increase heat and bring mixture to a boil. Decrease heat to low and simmer for about 2 hours until most of the liquid is absorbed, being careful not to overcook and dry out the meat.
  • Brush one side of a tortilla with canola oil. Spread beef and chorizo in a line 1/2 inch from one side. Add Colby-Jack cheese and diced chile peppers. Roll tortilla tightly, tucking the first rotation under the filling. Place rolled tortilla seam-side down on air fryer rack. Repeat with remaining tortillas.
  • Preheat the air fryer to 375 degrees F (190 degrees C following the manufacturer's guidelines.
  • Air fry for 6 minutes until perfectly crispy. Enjoy right away.
