Beef and lentil burger

Elevate beef burgers with lentils, zucchini, and fresh coriander cherry tomato topping.
Ingredients:
  • Olive oil spray
  • 40.00 ml chopped fresh coriander
  • 400g can green lentils, rinsed, drained
  • 300g lean beef mince
  • 1 small zucchini, coarsely grated
  • 1 egg
  • 250g cherry tomatoes, halved
  • 90g (1/3 cup) low-fat hummus
  • 4 wholegrain rolls, split, toasted
  • 1 Lebanese cucumber, trimmed, thinly sliced
  • 80g (2 cups) baby spinach leaves
Instructions:
  • Combine lentils, mince, zucchini, and egg in a large bowl. Season generously with salt and pepper. Mix the ingredients together using your hands until fully incorporated. Form the mixture into 4 patties and arrange them on a baking tray. Cover and refrigerate for 10 minutes to firm up.
  • Combine the fresh tomato and fragrant coriander in a bowl.
  • Prepare the barbecue grill or chargrill by spraying it with oil and heating it to medium-high. Grill the patties for 4 minutes on each side until they are lightly charred and fully cooked. Spread hummus on the bottom half of each roll and layer with cucumber, spinach, patties, tomato mixture, and the top half of the roll.
