Beef and Millet Stew in Bread Bowls

Savor beef and veggie stew in bread bowls for a delightful meal.
Ingredients:
  • 1 loaf (about 1 lb) frozen 100% whole wheat bread dough, thawed
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil leaves
  • 2 teaspoons olive oil
  • 1 lb lean beef stew meat, cut into small pieces
  • 1 medium onion, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 2 teaspoons herbes de Provence*
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can (14 oz) reduced-sodium beef broth
  • 1 can (28 oz) diced tomatoes, undrained
  • 1/2 cup water
  • 1/2 cup uncooked millet
  • 1 cup ready-to-eat baby-cut carrots, cut in half lengthwise
  • 1 cup frozen cut green beans (from 1-lb bag)
Instructions:
  • Grease the outsides of 6 (10-ounce) custard cups lightly with shortening (avoid using cooking spray) and place them upside down on a large cookie sheet.
  • Divide the dough into 6 equal pieces and shape each piece into a ball. Roll or pat each ball into a 6-inch round. Place the dough round over the bottom of each custard cup, stretching to fit. Brush each round with 1 tablespoon of oil and sprinkle with basil. Cover and let it rise in a warm place for 20 minutes.
  • Preheat the oven to 350°F. Bake the bread bowls for 16 to 20 minutes until they are beautifully golden brown. Allow them to cool for 5 minutes before carefully removing them from the cups onto a cooling rack. Let them cool completely for about 30 minutes. (Note: the insides of the bread bowls may be slightly moist.)
  • In a 3-quart saucepan over medium-high heat, warm 2 teaspoons of oil. Add beef, onion, garlic, herbes de Provence, salt, and pepper. Sauté for 5 to 6 minutes, stirring occasionally, until beef is lightly browned.
  • Combine the broth, tomatoes, and water in a pot and bring to a boil. Lower the heat, cover, and simmer for 45 minutes. Add millet, carrots, and green beans, and continue cooking uncovered for about 25 minutes until the beef is tender. Serve the stew in bread bowls.
