Beef and mushroom stroganoff

Protein-packed beef and mushroom stroganoff, loaded with essential nutrients for a delicious heartwarming dish.
Ingredients:
  • 500g lean beef stir-fry strips
  • 2.50 gm sweet paprika
  • 18.20 gm olive oil
  • 1 onion, thinly sliced
  • 250g button mushrooms, halved
  • 250ml beef stock
  • 24.40 gm Worcestershire sauce
  • 180g sour cream
  • 200g green beans, topped
  • 40.00 ml chopped chives
  • 4 slices wholegrain toast, to serve (optional)
  • Salt, to season
Instructions:
  • In a bowl, coat beef with paprika, salt, and pepper. Heat oil in a large frypan over medium-high heat and brown beef in batches for 2-3 minutes each. Remove beef with a slotted spoon and set aside.
  • Lower the heat to medium and sauté the onion until soft and lightly golden for about 5 minutes. Turn up the heat to high, add the mushrooms, and sauté until lightly browned for about 2 minutes. Pour in the stock and Worcestershire sauce, bring it to a boil, then let it simmer gently on low heat for 5 minutes until the sauce thickens slightly. Mix in the sour cream, add the beef along with its juices back into the pan, and cook until the sauce thickens for 1-2 minutes. Meanwhile, steam the green beans until tender for about 3 minutes.
  • Ladle the savory stroganoff and beans into individual bowls, garnish with fresh chives, and accompany with wholegrain toast for a delightful meal.
