Mushroom-Stuffed Shells: A hearty twist on a classic recipe using flavorful mushrooms to enhance taste.
Ingredients:
  • 1/2 pound of ground beef
  • 8 ounces button mushrooms, finely chopped
  • 1/2 (16 ounce package) jumbo pasta shells (18-22 shells)
  • 1 cup whole milk ricotta
  • 1 large egg
  • 2 garlic cloves, minced
  • 2 teaspoons oregano
  • salt and pepper, to taste
  • 15 ounces prepared tomato sauce
  • 1 1/2 cups shredded mozzarella cheese
Instructions:
  • Preheat the oven to 350°F (175°C).
  • 1. Bring a large pot of lightly salted water to a boil. Add the shells and cook uncovered until al dente, about 10 minutes. Drain and set aside.
  • Heat a large skillet over medium-high heat until hot. Brown and crumble the ground beef for 5 to 7 minutes. Add mushrooms and continue to cook until they soften and release liquid, around 5 minutes. Drain excess fat, then transfer the mixture to a separate bowl and let it cool for about 10 minutes.
  • Combine ricotta cheese, egg, garlic, and oregano with the cooled meat mixture, ensuring everything is thoroughly mixed. Season generously with salt and pepper.
  • Spread half of the tomato sauce evenly on the bottom of a 9x13 baking dish. Fill each shell with approximately 1 teaspoon of meat mixture and arrange them in the dish with the filling facing up. Repeat this step for the remaining shells. Pour the rest of the tomato sauce over the shells and top with shredded mozzarella cheese. Enjoy!
  • In a hot oven, bake until the cheese is melted and slightly golden, about 25 minutes. Serve right away.
