Savor a comforting beef and onion soup with cheesy biscuit croutons made using Progresso® broth and Original Bisquick® mix. Flavorful and delicious!
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 package (1 oz) onion soup mix (from 2-oz box)
  • 1/4 teaspoon pepper
  • 1 3/4 cups Progresso™ beef-flavored broth (from 32-oz carton)
  • 3 cups water
  • 1 tablespoon packed brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 cup Original Bisquick™ mix
  • 3 tablespoons grated Parmesan cheese
  • 1/4 cup water
  • 3/4 cup finely shredded Swiss cheese (3 oz)
  • Italian (flat-leaf) parsley sprigs, if desired
Instructions:
  • 1. In a 3-quart saucepan, sauté beef, onion soup mix, and pepper over medium-high heat for 5 to 7 minutes, stirring occasionally, until beef is fully cooked; drain any excess fat. 2. Add the remaining soup ingredients and bring to a boil. 3. Reduce the heat to medium-low and simmer uncovered for 10 minutes.
  • Preheat your oven to 425°F. Grease a cookie sheet with cooking spray. In a medium bowl, combine Bisquick mix, Parmesan cheese, and 1/4 cup water until a soft dough forms. Transfer the dough onto a work surface dusted with Bisquick mix; roll it in the mix to coat. Shape the dough into a ball and knead it 10 times.
  • On a baking sheet, shape the dough into a 12x6-inch rectangle, 1/4 inch thick. Cut it into 8 squares without separating them. Bake for 6 to 8 minutes until golden brown. Set the soup aside, covered, to keep it warm.
  • Once croutons are out of the oven, generously sprinkle Swiss cheese on top. Turn the oven to broil. Gently pull apart the croutons. Broil them 4 to 6 inches away from the heat for 2 to 3 minutes until the cheese is golden and bubbly.
  • Divide the soup into 4 bowls, top each with 2 croutons, and finish with a sprinkle of fresh parsley.
