Beef and potato curry

Cozy up with this hearty beef and potato curry for a comforting winter meal.
Ingredients:
  • 18.40 gm vegetable oil
  • 2 small onions, quartered
  • 500g beef stir fry strips
  • 87.50 gm massaman curry paste
  • 1 x 400ml coconut milk
  • 750g tiny taters, drained and halved (see tip, below)
  • 250.00 ml frozen beans
  • 2 x 250g pkts Brand microwave basmati rice
  • Mango chutney, to serve
Instructions:
  • In a large saucepan over medium-high heat, sauté onion and beef strips in hot oil until browned, about 5 minutes. Stir in curry paste and coconut milk, then cover and simmer for 20 minutes until beef is tender.
  • Add the potatoes and beans and cook for an additional 5 minutes until warmed through. Serve alongside cooked rice and mango chutney.
