Beef and Potato Dumpling Casserole

Satisfy cravings with a simple meat and potato casserole.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 cup chopped onion (1 large)
  • 1 package (8 oz) sliced fresh mushrooms (3 cups)
  • 1 teaspoon salt
  • 3/4 cup water
  • 2 tablespoons butter or margarine
  • 1 cup Betty Crocker™ mashed potatoes
  • 3/4 cup sour cream
  • 2/3 cup Original Bisquick™ mix
  • 2 teaspoons chopped fresh chives
  • 1 egg
  • 3 tablespoons Original Bisquick™ mix
  • 1 can (18.8 oz) Progresso™ Vegetable Classics creamy mushroom soup
  • 1 bag (12 oz) frozen broccoli cuts
  • 1/4 cup ketchup
Instructions:
  • Preheat oven to 400°F. Brown beef, onion, mushrooms, and salt in a 12-inch skillet over medium heat, stirring occasionally.
  • As the beef cooks, in a 2-quart saucepan, bring water and butter to a boil. Remove from heat and mix in dry potatoes and sour cream. Allow it to sit for 1 minute, then stir energetically until smooth. Add 2/3 cup of Bisquick mix, chives, and egg, and mix well.
  • After draining the beef mixture, blend in 3 tablespoons of Bisquick mix with the soup. Add the soup mixture, broccoli, and ketchup to the beef mixture and bring to a boil. Let it boil for 1 minute without covering. Transfer the mixture to a 3-quart casserole dish without greasing it, and spoon the potato dumpling mixture around the edge of the casserole.
  • Bake for 25-30 minutes until dumplings turn a beautiful light golden brown.
