Hearty red cabbage soup with beef, beans, and warm spices – great for lunch or dinner.
Ingredients:
  • 1 pound ground beef
  • 1 cup diced red onion
  • 1 cup chopped carrot
  • 2 cloves garlic, minced
  • 4 cups coarsely chopped red cabbage
  • 4 cups beef broth
  • 2 cups water
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (6 ounce) can tomato paste
  • 2 teaspoons salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground black pepper
Instructions:
  • In a large soup pot over medium-high heat, brown the ground beef until crumbly, about 5 to 7 minutes. Drain off excess grease.
  • Sauté onion and carrot until onion is translucent, about 5 minutes. Stir in garlic during the last minute. Add cabbage, broth, water, pinto beans, tomato paste, salt, cumin, and pepper. Bring to a boil, then simmer covered for 2 hours.
