Cozy up with a warm, hearty soup featuring ground beef, red lentils, and cabbage - a delicious comfort for chilly evenings.
Ingredients:
  • 1 (48 ounce) can beef broth
  • 3 carrots, sliced
  • 3 stalks celery, sliced
  • 1 cup red lentils, rinsed
  • 2 cups chopped cabbage
  • 1 (15 ounce) can tomato sauce
  • 1 (14.5 ounce) can diced tomatoes
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 bay leaf
  • 1 pound ground beef
  • 0.25 cup chopped onion
  • 2 cloves garlic, minced
Instructions:
  • In a large stockpot over medium-high heat, simmer broth, carrots, celery, and lentils until boiling. Lower the heat and stir in cabbage, tomato sauce, diced tomatoes, thyme, oregano, salt, pepper, and bay leaf. Cover and gently simmer for about 45 minutes until all ingredients are tender.
  • As the soup bubbles away, warm a skillet over medium-high heat. Cook ground beef, onion, and garlic until beef is browned, onion is soft, and mixture is crumbly, about 5 to 7 minutes. Drain excess fat, then stir into the soup. Enjoy!
