Beef and Salsa Skillet

Make a delicious and easy one-pan Mexican dinner for a low-maintenance meal cleanup.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 jar (16 oz) thick & chunky salsa
  • 1 can (15 oz) Progresso™ dark red kidney beans, undrained
  • 1 can (7 oz) whole kernel corn, undrained
  • 1 can (8 oz) tomato sauce
  • 2 teaspoons chili powder
  • 1 1/2 cups Original Bisquick™ mix
  • 1/2 cup milk
  • 1/2 cup shredded Colby-Monterey Jack cheese (2 oz), if desired
Instructions:
  • In a large skillet, brown the beef over medium heat, stirring occasionally, then drain any excess fat. Add salsa, beans, corn, tomato sauce, and 1 teaspoon of chili powder. Bring to a boil, then simmer on low heat.
  • Combine Bisquick mix, remaining 1 teaspoon chili powder, and milk in medium bowl to form a soft dough. Spoon 6 dollops of dough onto simmering beef mixture.
  • Cover and cook for approximately 20 minutes until dumplings are light and fluffy inside. Sprinkle with cheese, cover again, and cook for about 2 minutes until cheese is melted.
