Quick and healthy vegemite beef stir-fry ready in 25 minutes for a hearty dinner.
Ingredients:
  • 36.40 gm peanut oil or vegetable oil
  • 500g beef rump steak, thinly sliced
  • 1 large brown onion, thinly sliced
  • 1 red capsicum, thinly sliced
  • 1 bunch choy sum, trimmed, chopped
  • 150g snow peas, trimmed, chopped
  • 1 long red chilli, thinly sliced (optional)
  • Steamed jasmine rice, to serve
  • 42.00 gm soy sauce
  • 30.00 ml rice wine vinegar
  • 28.60 gm honey
  • 3 tsp Vegemite Squeezy
  • 1 garlic clove, crushed
Instructions:
  • Create a flavorful Vegemite stir-fry sauce by thoroughly mixing all ingredients in a bowl.
  • In a sizzling wok, swirl in half of the peanut oil over high heat. Toss in half of the beef rump steak and sizzle for 2 to 3 minutes until beautifully browned. Place in a heatproof bowl. Repeat with the remaining oil and beef for more delicious results.
  • Add the onion to the wok and stir-fry until softened, about 2 to 3 minutes. Introduce the capsicum and stir-fry for 1 minute. Bring back the beef to the wok along with choy sum, snow peas, and red chili, if desired. Stir-fry for 1 minute. Pour in the Vegemite stir-fry sauce and cook for 1 to 2 minutes until heated through.
  • Serve the delectable stir-fry alongside fluffy white rice.
