Beef and vegetable lettuce wraps

Try a tasty and savory bite of Curtis Stone's beef and veggie lettuce wraps - ideal for a satisfying entree or a delightful snack.
Ingredients:
  • 9.20 gm olive oil, from the pantry
  • 300g Butcher 5 star beef mince
  • 1 clove garlic, finely chopped
  • 1 stick celery, finely diced
  • 1/4 cabbage, thinly sliced
  • 67.50 gm hoisin sauce
  • 250.00 ml bean sprouts
  • 1 large carrot, grated
  • 1 spring onion, thinly sliced
  • 1 1/2 heads mini cos lettuce, stem ends trimmed about 16-20 leaves
  • 1/4 bunch coriander, roughly chopped
  • 88.00 gm sweet chilli sauce
Instructions:
  • In a large frying pan over medium-high heat, add half of the oil. Brown the beef for 3-4 minutes, stirring occasionally to break up any large chunks. Season with salt and pepper to taste, then transfer the beef to a plate.
  • Place the pan back on the heat and drizzle the remaining oil. Sauté the garlic, celery, and cabbage for 3 minutes, stirring frequently until slightly tender. Stir in the hoisin sauce, add the meat back to the pan, and cook for an additional 30 seconds.
  • Add the bean sprouts, carrot, and spring onion into the mixture, then season with salt and pepper to your liking. Take the mixture off the heat.
  • Stuff the lettuce leaves with the flavorful beef mixture, top with fresh coriander for a burst of herbaceous aroma, and drizzle with the sweet chili sauce. Enjoy immediately for a delightful and satisfying meal.
