Create savory beef-filled crepes for a delicious Pancake Tuesday treat.
Ingredients:
  • 375ml milk
  • 27.30 gm olive oil
  • 110g plain flour
  • 1 small onion, thinly sliced
  • 500g beef mince
  • 2 tsp plain flour, extra
  • 125ml beef stock
  • 125ml red wine
  • 100g roasted capsicum, sliced
  • 187.50 ml chopped fresh herbs (such as parsley and chives)
  • 2.50 gm cornflour
  • 125ml cream
  • 250.00 ml coarsely grated gruyere
Instructions:
  • Combine eggs, milk, and 1 tablespoon oil with flour, whisking until smooth. Refrigerate for 20 minutes.
  • Sauté the onion in the remaining oil until translucent. Brown the mince. Sprinkle extra flour over and cook for 1 minute. Pour in stock and wine, simmer until absorbed. Add capsicum, 1/2 cup of herbs, and season to taste.
  • Preheat a crepe pan over medium-high heat and lightly coat with oil. Pour 1/4 cup of batter into the pan and swirl to create a thin layer. Cook until browned, then flip and cook for an additional 30 seconds. Keep warm.
  • Combine cornflour and cream and whisk until smooth. Simmer over low heat until thickened. Stir in cheese until melted. Fill crepes with mince, top with sauce, herbs, and serve.
