Make quick and delicious beef lo mein using an Instant Pot® for a speedy dinner option.
Ingredients:
  • 1 (16 ounce) package fresh Chinese egg noodles
  • 1 tablespoon grapeseed oil
  • 2 cloves garlic, minced
  • 10 ounces beef skirt steak, cut into thin strips
  • 1 (8 ounce) package portobello mushrooms, quartered
  • 1 carrot, peeled and sliced diagonally
  • 1 red bell pepper, julienned
  • 0.5 cup snow peas
  • 2 tablespoons hoisin sauce
  • 2 tablespoons oyster sauce
  • 2 teaspoons liquid aminos
  • 1 tablespoon chopped green onion, or to taste
Instructions:
  • Bring a pot of water to a lively boil. Add noodles and cook for 5 minutes. Drain and keep warm.
  • Heat up the multi-functional electric pressure cooker by selecting the Saute function. Add oil and garlic and saute for 30 seconds. Add steak strips and continue sauteing until they begin to brown, which should take around 5 minutes.
  • Take out the steak from the pot and set it aside to stay warm. Pour 1/2 cup of water into the pot. Place a steamer basket in the pot and add mushrooms, carrot, bell pepper, and snow peas. Steam for approximately 5 minutes.
  • Carefully quick-release pressure following manufacturer's instructions for about 5 minutes. While that's happening, combine hoisin sauce, oyster sauce, and liquid aminos to create the sauce.
  • Remove the lid and mix noodles, steak, and vegetables with the sauce. Top with green onion for a fresh finish.
