Delicious budget-friendly ground beef lo mein stir-fry with Asian-flavored sauce and veggies.
Ingredients:
  • 6 ounces spaghetti
  • 1 pound lean ground beef
  • 3 tablespoons hoisin sauce
  • 2 tablespoons reduced-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons water
  • 1 tablespoon dry sherry
  • 2 teaspoons sesame oil
  • 2 teaspoons cornstarch
  • 1 teaspoon brown sugar
  • 1 tablespoon olive oil
  • 1 red bell pepper, cored and sliced vertically
  • 1 sweet onion, peeled and sliced vertically
  • 1 cup snow peas
  • 1 stalk celery, sliced
  • 2 teaspoons minced fresh ginger root
  • 1 teaspoon minced garlic
  • 1 pinch red pepper flakes
  • 1 tablespoon thinly sliced green onion
Instructions:
  • 1. Boil a pot of generously salted water. 2. Cook spaghetti in the boiling water, stirring occasionally, until perfectly al dente, around 12 minutes.
  • Brown the ground beef in a large skillet over medium heat until it's cooked through, slightly chunky, and nicely browned, which should take about 5 minutes. Once done, set it aside.
  • Combine hoisin sauce, soy sauce, oyster sauce, water, sherry, sesame oil, cornstarch, and brown sugar in a small bowl and whisk until well blended.
  • In the same skillet over medium-high heat, sizzle the vibrant mix of red bell pepper, onion, snow peas, celery, ginger, garlic, and red pepper flakes until veggies are tender, about 5 minutes. Reunite the ground beef with the veggies and combine thoroughly.
  • After draining the spaghetti, toss it into the skillet with the sauce. Stir and cook until everything melds together and the sauce slightly thickens, around 3 minutes. Plate up promptly and top with sliced green onions before serving.
