Beef mac 'n' cheese pot pies

Ingredients:
  • 500g beef mince
  • 700g jar tomato pasta sauce with herbs
  • 515.00 gm milk
  • 4.60 gm olive oil, extra
  • 170g packet macaroni cheese (see note)
  • 187.50 ml finely grated parmesan
  • 100g mixed salad leaves, to serve
Instructions:
  • 1. Heat oil in a frying pan over medium-high heat until shimmering. Add mince and brown for 6 to 8 minutes, breaking it up with a wooden spoon. 2. Pour in the tomato sauce and 1/2 cup of cold water. Bring to a boil, then reduce heat to medium-low. 3. Simmer the mixture for 20 minutes, stirring occasionally, until it thickens to perfection.
  • Preheat your oven to 200C/180C fan-forced. In a saucepan over medium heat, combine milk and extra oil and bring to a boil. Add macaroni cheese, stir well, and bring to a boil again. Reduce heat to low and simmer for 4 to 6 minutes, stirring occasionally, until pasta is just tender and creamy. Remove from heat and season with pepper.
  • Divide the mince mixture evenly among four 2-cup-capacity ovenproof dishes. Cover with creamy macaroni and cheese, sprinkle with Parmesan, and set the dishes on a baking tray.
  • Bake for 20 minutes or until pasta is golden and the edges are bubbling. Enjoy with a side of fresh salad leaves.
