Make quick and delicious Mexican beef and rice in 25 minutes using pre-prepared ingredients for a fun and flavorful meal.
Ingredients:
  • 430g (2 cups) sushi rice
  • 500g beef mince
  • 35g pkt taco seasoning
  • 4 ripe tomatoes, chopped
  • 200g pkt shredded iceberg lettuce
  • 400g can black beans, rinsed, drained
  • 235g (1 cup) Light Sour Cream, plus extra, to serve
  • 80g (1 cup) coarsely grated cheddar
  • Corn chips, to serve
  • Thinly sliced fresh jalapeño chilli, to serve
  • Fresh coriander sprigs, to serve
Instructions:
  • Prepare the rice according to the instructions on the packaging.
  • Heat oil in a large frying pan over high heat. Brown beef by stirring with a wooden spoon for 2-3 minutes. Add taco seasoning and half the tomato. Cook for another 4-5 minutes until beef is cooked through. Stir in 80ml (1/3 cup) water, then remove from heat.
  • Divide the rice, beef, lettuce, beans, sour cream, cheddar, and remaining tomato into serving bowls. Finish with corn chips, jalapeño, and coriander on top before serving.
