Beef Pot Pie with Potato Biscuit Crust

Try this easy and comforting pot pie for a regular dinner favorite.
Ingredients:
  • 1 piece (1/2 lb) deli roast beef, cubed (1 1/2 cups)
  • 2 cups frozen mixed vegetables
  • 1 medium onion, chopped (1/2 cup)
  • 1 jar (12 oz) beef gravy
  • 2/3 cup Betty Crocker™ mashed potatoes
  • 2/3 cup hot water
  • 1 1/2 cups Original Bisquick™ mix
  • 1/3 cup milk
  • 1 tablespoon freeze-dried chives
Instructions:
  • Preheat oven to 375°F. In a 2-quart saucepan, bring beef, frozen vegetables, onion, and gravy to a boil over medium heat, stirring frequently. Boil and stir for 1 minute. Keep warm.
  • Combine dry potatoes and hot water in a medium bowl; allow water to be absorbed. Mix in Bisquick, milk, and chives until dough forms. Transfer dough to a surface dusted with Bisquick; gently coat with more Bisquick. Shape into a ball, knead 10 times, then pat into an 11x7-inch rectangle and fold into thirds.
  • Spread the beef mixture evenly in an ungreased 11x7-inch (2-quart) glass baking dish, then gently lay the dough over the top.
  • Bake without a cover for 30 to 35 minutes, or until the crust turns a beautiful golden brown.
