Creamy Beef Fold-Over Pie

Satisfy cravings with hearty beef pot pie in a flaky crust.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 small onion, chopped (1/4 cup)
  • 1 can (10 3/4 oz) condensed cream of mushroom soup
  • 1 1/2 cups frozen mixed vegetables, thawed, drained
  • 1 tablespoon ketchup
  • 2 cups Original Bisquick™ mix
  • 1/2 cup boiling water
  • 1/4 cup shredded Cheddar cheese (1 oz)
Instructions:
  • Preheat oven to 375°F with the rack at the lowest position. Grease a 12-inch pizza pan using cooking spray. In a 10-inch skillet, sauté beef and onion over medium-high heat for 5 to 7 minutes until fully cooked; remember to drain excess fat.
  • Combine the soup, vegetables, and ketchup with the beef mixture. Cook for 3 to 4 minutes, stirring occasionally, until everything is heated through.
  • In a medium bowl, mix Bisquick and boiling water until a soft dough forms. Place dough on a surface dusted with Bisquick, gently coat with mix, shape into a smooth ball, and knead about 5 times. Roll into a 14-inch round and transfer to a pizza pan.
  • Spread the savory beef mixture generously over the dough, leaving a 2-inch border. Gently fold the edges of the dough up and over the flavorful filling.
  • Bake for 24 to 27 minutes until the crust is golden brown. Sprinkle with cheese and bake for an additional 3 to 4 minutes until cheese is melted. Allow it to rest for 5 minutes before slicing.
