Portable beef noodle salad with a healthy twist, perfect for a convenient and satisfying lunch.
Ingredients:
  • 40g dried soba noodles
  • 6.00 gm miso paste
  • 2 tsp mirin
  • 250.00 ml sliced vegetables (such as cucumber, grated carrot, sliced capsicum)
  • 50g rare roast beef, sliced
  • 20g mixed salad leaves
Instructions:
  • Prepare the noodles according to the package instructions. Rinse with cold water to refresh before draining.
  • Mix the miso paste, lemon juice, and mirin in a 500ml (2-cup capacity) glass jar with a secure lid.
  • Layer the noodles, vegetables, and beef in the jar, then add the salad leaves. Seal the jar tightly with the lid and refrigerate until ready to enjoy.
  • Transfer the dish into a bowl and gently mix it to evenly cover with the dressing.
