Upgrade your beef, carrot, and potato stew with a savory touch of creamy mushroom soup.
Ingredients:
  • 1.5 pounds cubed beef stew meat
  • 2 tablespoons vegetable oil
  • 1 onion, finely diced
  • 0.25 cup all-purpose flour
  • 4 cups diced potatoes
  • 2 cups diced carrots
  • 1 (10.75 ounce) can beefy mushroom soup
  • 2 tablespoons cornstarch
  • 0.5 cup cold water
Instructions:
  • In a large stock pot, sear the stewing meat in oil until browned. Add onions and sprinkle flour, stirring until well combined.
  • Fill a stock pot with water, filling it halfway for a thick stew or within one inch of the top for a diluted stew. Let the meat cook until tender, monitoring the water level regularly. Add more water as needed. Cook for 1 1/2 hours.
  • Once the beef reaches desired tenderness, introduce potatoes, carrots, and beefy mushroom soup. Simmer for 30 to 45 minutes until vegetables are soft.
  • Combine cornstarch and cold water in a bowl. Stir the mixture into the soup and let it simmer. If the soup is not thick enough, make another cornstarch and cold water mixture. Heat the soup, season with salt and pepper, and serve.
