Beef stir-fry with soy pumpkin

Make a flavorful beef stir-fry paired with roasted sesame pumpkin for a delicious weeknight dinner.
Ingredients:
  • 700g Kent pumpkin, cut into wedges
  • 42.00 gm Premium Soy Sauce
  • 2 tsp finely grated ginger
  • 1 garlic clove, crushed
  • 3.00 gm sesame seeds
  • 750g No Added Hormones Beef Rump Steak, thinly sliced
  • 175g pkt MasterFoods® Chinese Beef Stir Fry Recipe Base
  • 36.40 gm Monini Classico Extra Virgin Olive Oil
  • 1 brown onion, cut into thin wedges
  • 1 red capsicum, seeded, thinly sliced
  • 125ml beef stock
  • 1 bunch choy sum, trimmed
  • 2 x 250g pkts Uncle Ben’s Basmati Rice
  • Thinly sliced spring onion, to serve
  • Toasted sesame seeds, extra, to serve
Instructions:
  • Preheat the oven to 220C. Line a baking tray with parchment paper. Toss pumpkin with soy sauce, ginger, and garlic in a large bowl. Transfer to the prepared tray, sprinkle sesame seeds on top, and roast for 30 mins until the pumpkin is tender.
  • Combine beef and half of the recipe base in a bowl, then heat half of the oil in a wok over high heat. Stir-fry the beef in batches for 5 minutes or until browned. Transfer to a plate and cover to keep warm.
  • In the wok, heat the remaining oil until sizzling. Stir-fry the onion and capsicum for 2 minutes until they are just tender. Add the beef back to the pan along with the rest of the recipe base and stock. Bring to a boil, then toss in the choy sum and stir-fry for another 2 minutes until wilted.
  • Cook the rice according to the instructions on the packet.
  • Garnish the stir-fry, rice, and pumpkin with fresh spring onion and an extra sprinkle of sesame seeds for added flavor and visual appeal.
