Beef stir-fry with soy pumpkin

Create a delicious beef stir-fry with fragrant sesame-roasted pumpkin for a simple weeknight meal.
Ingredients:
  • 700g Kent pumpkin, cut into wedges
  • 42.00 gm Premium Soy Sauce
  • 2 tsp finely grated ginger
  • 1 garlic clove, crushed
  • 3.00 gm sesame seeds
  • 750g No Added Hormones Beef Rump Steak, thinly sliced
  • 175g pkt MasterFoods® Chinese Beef Stir Fry Recipe Base
  • 36.40 gm Monini Classico Extra Virgin Olive Oil
  • 1 brown onion, cut into thin wedges
  • 1 red capsicum, seeded, thinly sliced
  • 125ml beef stock
  • 1 bunch choy sum, trimmed
  • 2 x 250g pkts Uncle Ben’s Basmati Rice
  • Thinly sliced spring onion, to serve
  • Toasted sesame seeds, extra, to serve
Instructions:
  • Preheat the oven to 220C and line a baking tray with parchment paper. In a large bowl, mix pumpkin with soy sauce, ginger, and garlic. Transfer the mixture to the lined tray, sprinkle with sesame seeds, and roast for 30 minutes until the pumpkin is tender.
  • Combine half the recipe base with beef in a bowl. Heat half the oil in a wok over high heat and stir-fry beef in batches for 5 mins until browned. Transfer the beef to a plate and cover to keep warm.
  • Heat the remaining oil in the wok until sizzling. Quickly stir-fry the onion and capsicum for 2 mins until they are just tender. Add the beef back to the pan along with the remaining recipe base and stock, allowing it to come to a boil. Toss in the choy sum and stir-fry for another 2 mins until the leaves are wilted.
  • Cook the rice according to the instructions on the packet.
  • Garnish the stir-fry, rice, and pumpkin with fresh spring onions and additional sesame seeds.
